Test your product in the market, before going physical store, test you product via digital store. Start in a small area and scale digitally to multiple areas before opening physical stores.
Location is very very important. You may try to save few bucks by opening your bakery front in a street 2/3 levels inside, but if people can't see it, no one will find it. Also, pay food influencers initially to taste your products and post reviews online.
Quit your job first. It’s impossible to handle two things at the same time, and running a food outlet/brand can be exhausting.
