How to maintain consistency?

I'm a student and overwhelmed by the number of technologies available in the market, and alot of them intrigue my interest. And I'm learning maybe a lot of things. Which ends up increasing my load which results in inconsistent work. I tried prioritising but the college work plus the need for internship ends up in me trying to do everything all the time. Can someone give me some advice as to how to get my things in control
