Career growth
While working in a company, how do I get to know if I am doing good work or not? How do I get to know that this work experience will be useful in the future to switch between companies?

Get guidance from a genuine mentor/senior.

I mean to ask how I would get to know if whatever I am working on will add points to my resume to consider me as a senior software engineer while switching companies.
Like there can also be some kind of work which doesn't add value for me to get considered to a 1 level above position compared to current one.
I have heard some sde2 giving interviews for sde2/3 while switching get offered sde1 post interview.

I understood it.
You can get some idea about what you are doing is good or not by analysing market trends and JDs.
But sometimes some trends are just a bubble.
Being a test automation engineer, I have a very high level idea about what's in demand or will be in demand and what is considered good work for growth.
But if someone from testing, test automation background would have asked this question, I could have asked to share more details about the current work to give insights.
So similarly if you find a genuine mentor/senior to understand what you are doing, what are your aspirations and how you can bridge the gap.
That would be the best strategy IMO.

Lekin yeh kaise pta chalega ki jo kaam me kar rha hu woh mere experience me value add hoga ya nhi kyonki mene sunna hai kuch sde1 jab sde2 ke liye interview dete hai toh uske baad bhi based on performance unko sde1 wapis offer hota hai.
