Equally irritating, when you send a list of 6 points, 3 of them are action tasks and 2 of them are questions and all you get back is "Hello"

Very true. I hate this too. Surprisingly all my wife's friends and sisters do this and we had a fight when I told her my opinion. I studied about this behaviour and realised that people don't want to start the conversation with the work and they want to start the conversation informally. But at the same time they don't know what more to say other than hi. 🤦
