Importance of title?
Hey, my current title at the company is “Frontend Engineer” but over time I have started contributing to backend as well. Now I am looking to switch to a fullstack position. So when HRs ask me what do I do, I mention I am a fullstack dev at my current company. Is this okay to do or should I just mention I am a frontend dev? I am worried about this because what if they think I am lying about my title. They might expect to see “Software Engineer” or “Fullstack Engineer” on my offer letter/payslips at the end of the interviews. TLDR: how important is the title on the offer letter and payslips while switching?
Is “Frontend Engineer” printed on your company’s payslip!! This is weird, because usually the title are technology agnostic- like Software Engineer, Consultant, Software Development Engineer, Tech Analyst etc. But if it is mentioned on your Payslip, then certainly you can’t bluff like this, they may notice it and ask you.

On number of initial HR screening calls I have mentioned about being fullstack dev which technically is true. I genuinely didnt know they meant official role I have. Will this be a big issue when I clear all the interviews and share my payslips?
No, I think it will still be ok, no big deal. As long as you clear the interview it should be good. When someone asks, you can just tell as it is- that your official role is of front end, but for last few months (or a year) you had started working on backend too. Though to be fair, you should have told this to HR too, but whenever you get the opportunity to course correct, better tell that, because anyway someone may notice it in payslip and they may feel lied upon.
