Not joining after accepting an offer!
This could be a rookie question, but what exactly are the implications of accepting the official offer letter and then not joining the company? Any legal issues can come? If not, then what's the point of all those formalities- these guys even capture the IP address, signature etc when the offer is accepted. Why all that fuss? Also, when exactly does an individual become an actual employee of a company? I mean, at what point of the on boarding procedure do I legally become an employee?

You can decide not to join even on the date of joining. The most they can do is put your profile on a lifetime ban only for that company. There won’t be any legal issue
So don’t worry, just don’t join if you don’t want to

Legally they cannot do anything basis the offer letter. It is called "offer" for a reason.
Max they can put you in blacklist for their organisation.
Legally they can't do anything about it.
It's better not to burn the bridges, so maybe inform them beforehand and let them know the reasons for you not joining the organisation atm.
Also, I have heard that organisations and recruiting agencies have a shared database of candidates with no show record.
You can reject any day before the joining date. Just don't share your PAN or PF details. Some stupid HR create a new account. No other implications
