If you're looking for jobs, just go for Java. Don't even bother looking at new stuff like rust.
Anything like node/react , simple php, livewire or some other front end.
The bigger question is what's the domain you want to go in?
What's the tech stack you wish to learn ? What do you want to do in the whole development lifecycle?
open to learn any back-end tech stack... but should have jobs in market. Can you suggest 1 or 2. Also should I have to learn front-end too?

Mean/mern/mevn stack should be the best way to start and go ahead. Ruby on Rails - there's a market but not seen much enthusiasm as of now. Maybe I'm not looking at the right places but these 4 should be good enough
Yes if you want not to limit yourself please go full stack. Knowledge of Front end is basically an add-on for you not the company. Companies will priortize people with full stack knowledge rather than only the back end. That said , there are jobs only for backend related activities.
