Especially under what heading, so that it doesn't offend recruiters or makes us look like moonlighting
Mention that you're asking for non-tech, else you'll get tech suggestions by default

Also, Projects header does not define work or non work. Hence the question

Do it without worrying about anything, i have several projects and it actually adds more weight to the resume.

I made a portfolio. Added all my consulting/side gigs in it. They are extremely helpful honestly. Gives you a leverage in terms of conversation with the hiring managers as well.

Projects. If it's open source then you can list it under Open-source contributions
