Money vs Learning

My current company is well established with a large employee count and practically infinite runway (unlike any startup). Work culture is definitely like that of a startup though (because they grew rapidly). Their pay is high, and increments are also high (if you work really hard of course). My current role however, is that of a tech PM, which is often seen as a proxy for a generalist i.e. future entrepreneur (there is some intersection in the learnings but both roles are not the same)

Should I explore companies (and if yes how should I go about it) that offer an EIR/Generalist role albeit at a slightly lower salary (though the eSOP component can be a nice wealth builder, or a complete waste, for someone young like me because my immediate expenses are low). I think that it would help me develop a more target skill set for my eventual goal of becoming an entrepreneur myself. The loss that I will face will be purely monetary, something that hurts but it is the lowest it will ever be in my career ahead (provided that I hopefully grow in my career in the years to come).
