Which country should I apply for Schengen tourist visa to get it done at the earliest? I am planning to go to Netherlands and Sweden on 25th oct i.e. 2 months from today.
Really really really want to travel to Europe this year for a 3 week solo trip but unfortunately the visa process seems to be a buzzkill
I’ve heard people wait for 6 months and still not get their visa, despite following all proper procedures

Why wait for 6 months? Just find an early slot and reschedule.
Stop whining about visa process. It's not a lottery ticket. Show them you're not a potential illegal immigrant. Simple!
