License Requirements for Roadside Stall

Hi

We are planning to open a roadside food stall in Bengaluru, it will be a makeshift roadside stall and will be operational for about 4-5 hrs per day. Wanted to know what all licensing are required for such small stalls? Which offices do we need to take permission from, like Police, BBMP etc? And, some people were saying that we would need to pay protection money to local mafia, is this true? If anyone can point to me in the direction where I can get some information that would be really helpful.

Start illegally.
If someone comes then just pay the bribe. If bribe is too high then say the food stall guy is poor and his mum be dying and he is studying for upsc at night under a mombati... to reduce the bribe amount. If they don't agree don't put stall for a few days and come back again/move to other location Rinse and repeat.

Rent too you would have to pay. The stalls in CP of Delhi do, so I guess it would be on the same lines.

Yup, had talked to a roadside stall wala (cigs + other things he was selling) in CP on the rent, it was 15K for him. The rent is for the spot on the roadside not physical shop. Might be different in Bangalore.

Pay the person who unofficially ‘owns’ the area where the shops are present
Pay police almost on a daily basis Pay BBMP officials when random inspection happens ( approx once in a month ) Just chat with someone already owning it - you will get to know

Officially to sell prepared food - one license required is FSSAI license
8000 if thru agent and around 4000 if own
Other procedures .. don’t know

You would need almost all licenses similar to that of a proper restaurant, if not more.

Note: there will be enough difficult situations caused by your nearby stall/shop owners as well, and likely the police as well

Firstly, are you planning to have a moving cart or food truck, or is it going to be in one place? If it's a moving cart, things would be much easier for you. Officially, to be able to sell food, you should have a FSSAI licence. Then, the food inspector from the BBMP local office would visit from time to time to check hygiene, food quality, and cleanliness.

Unfortunately, in India, this is not enough! You would have to bribe the policemen and local goons and maybe even have beef with the neighbouring stall owners.

It is better to start with a very small menu like bread-omelette, vada pao, or maggie. Gradually increase the menu as per the local preferences and taste of your customers. Invest in a clean and attractive stall so that you may be able to attract young customers. It would also help in building a loyal customer base.

There is not much to do officially, but unofficially, you would have to be prepared for absolutely anything. Hopefully, you will be able to get a good repo with the police men. Good luck with your stall.

Rent a food van and start your food business from it. Only you need to take an FSSAI license. You will be able to explore new places in the city and make an analysis of sales ( In this way you can find the most suitable place to start your business).

Wherever you decide to set up a shop, there will be an assigned shop with all permissions which you pay to that cops take money from. So that includes kind of cost of doing business + daily pocket money for cops. Apart from that you should be good to go.

Also good luck explaining the unaccountable expenses to income tax department. But normally from what I heard it over head cash payment for vendors so. That’s that.

didnt know liceneses are required for mobile stalls as well. There are pani puri guys who put up the wares in the evening. I never saw any government doc being displayed. (you can notice them at hotels, even the small ones)
