Once we accept multiple offers, how and when should be reject them before joining in a good way? And do companies blacklist if we reject the offer after accepting?

Let's make sure that company you want to join is the company you want to join. Google company culture ask few ex employees. If all's good keep the HR in loop that you gonna join this day. 1 or 2 week before joining the company you can start rejecting other offers.

Blacklist depends upon company to company

True. But in most cases, the company would blacklist the applicant. Trust plays a major factor in these cases, and the companies wouldn’t trust an applicant who rejected an offer after accepting. A majority of the companies use some sort of an ATS tool to track this, so they would know if you applied again later, and automatically reject you.

Straight reject because every company is doing layoffs

Never reject. Keep them in play. Ask for last minute renegotiation. If not just stop answering calls.
Before anyone starts saying "professional behavior", ask yourself are they reasonable?
