Too much of a trajectory change for an SDE to Consultant

I am currently doing my internship at Amazon which is most likely not gonna get converted to a full time offer (provided the market conditions), I have another offer from EY for the role of Technology Consultant which would mainly involve work in data analysis. I have heard that it will be very tough to come back to an sde role from a consultant role. So I am in a dilemma of what to do next? P.S. I am more inclined towards an SDE role due to the growth it provides.

I was working with PwC as tech consultant and it took me around an year for my resume to get shortlisted by Amazon (had no other shortlist) so it is possible but I think with Amazon internship in your resume it should not be that hard.
