Drop your best pickle or achaar recommendations (with brands if possible)

I'm a newbie at cooking. But I'm trying to improve. What are your favourite dishes to make for dinner, especially after a long work day? Some caveats: Ideally not many utensils. I only have one induction cooker 🥲 Any suggestions would be great!

I am a Parsi (pre-partition ancestors, surti roots, partly brahmkshatriya - partly parsi to be precise, few of the ancestors were treasury bookkeepers to the dimond traders). Rarely have I ever stumbled upon another parsi on any social media. Hu Ahmedabad thi chhu. We can catchup at the agyaari someday if youre in the town. Looking for some low calorie yet tasty spicy/sour sauces, mostly for adding to soya chunks and paneer and chicken. The current one I use isn't really macro friendly (way too much sodium & calories)
