1.Be ready to fail (I hope you don't, but the food bus is tough!)
2. if you do fail. Nothing changes - you are still an awesome chef! And you can try again with some learnings
3. If you succeed. Then you have a tough choice of deciding how you want to grow (hope to see your post here in about 6 months!!)

Swifts boot? Why not just a stall? Few scenarios I see that can immediately go wrong.
You are cooking above a very flammable liquid, unless you are just selling already cooked ones.
If you are selling precooked ones you would lose a lot of freshness that comes with it.
It's cooking, what about the grease? Your boot is going to be filled with stuff you will need to use hard toxic chemicals to remove it.
There is never enough good hygienic eateries out there but if you are serious, ask yourself how you would set yourself up as different from the rest?

Add in your profession as brand. People will flock just to have a chat with you.
Find a location where footfall is very high.
One of my friends started a snacks shop in front of Accenture office in Sarjapur.
He is profitable from 2nd month. He kept prices low, quality and taste good.
The key is the footfall he gets during lunch hours. More than 100 KoTs with average bill value of 70₹ only during breakfast and lunch timings.
Go ahead, start it. Share the location on the sub once you have gone live.
