Suggestions: Need plans for wife's birthday

Coming 27th will be wife's birthday. Already missed her 1st birthday post marriage(For some unforeseen reason)😑 and still have to hear it from her, from time to time 🤦, because she had planned an excellent one for my birthday. So wanted to surprise her this time and looking for some creative ideas.
And also, what gift can I get her? Wanted to purchase gold pendent and earring but gold price has shot up 🤦😕.

What is the budget?
Don't have a particular number, but my conservative middle-class mind says something less than 5k would be nice. If it's something different and we don't do it regularly then I can increase my budget depending on the event.
If still less I would be the happiest..
Because I have to anyways spend on cake and dress(Which are non-negotiable 😉)
